This picture has been processed in GIMP from the former picture.

For white and black conversion, the image was split out in layers using colour channels.
I duplicated each of the channels in order to get a black and white background from the combination of the red, green and blue channels.
Above that, I applied tints to the red and blue channels with layer masks to control the tint of each layer, and I used the green channel on top of them with just black and white to preserve the white colour of the eyes (edited with the paintbrush to get them whiter).
I used the red channel for midtones, as it was an easy and comfortable way to get rid of skin imperfections.

Interesting, I have been meaning to use the colour channels, but haven't yet.

The flesh tones being nice in the Red channel is a good tip - Wavelet Decomposition is good for skin imperfections, although deciding what to correct is a tough choice.

I usually try to set the values in my camera so there is no further need for adjustments (or really few of them), but these days I'm curious about learning how to do some things with GIMP, and even if I know I'll reach the lesson where Wavelet Decomposition is explained... I'm just at the very beginning (and I love to experiment by myself, that's the reason why I try with the red channel)
