Poached Eggs

Poached eggs are hard to get perfect and top chefs, and mother-in-law's somehow make it look easy. Here's a few hints and tips to get the best results.
1. Use the freshest eggs you can get
2. Let the eggs reach room temperature before cooking
3. Slide the egg slowly into simmering water from a small bowl.
4. Try adding a little vinegar or stirring the water to help the egg keep its shape
