How does this black/white-color-thing work? What I mean, how is the way you did this?

Oh, that is easy. Just remove all saturation from all colors except red. This gives you a first - poor - effect.

The difficult way is to mask the section, that should be colored, then invert the mask and remove the saturation. this gives a better effect.
