There are not good pears right now at the market here

absolutely. It is a standard pie dough (flaky pastry), prebaked (by me), a thin layer of melted chocolate with a little instant coffee and a little cream (mocha ganache), sliced pears (apples will probably wokr fine), and an egg and cream blend with a little sugar poured around the fuit-
