you can judge from the eyes, from the color of the gills, by touching the flesh (which obviously isn't permitted for buyers, but it should be springy to the touch and elastic) and the smell, which isn't fishy at all but smells of fresh sea water

danke sehr dhania, and yes! i knew some of these tips, but not all of them, i was wondering if the holder was doing specific by holding the fish like this, but i see now! guess squeezing to see the texture of the fish... and yes! the smell is pretty reflective of the state of freshness huh?
