I can't speak for this bit of food porn, as I've (dare I say it)never had chicken curry homemade or otherwise. Looks delicious though.

I can speak to mexican mole, tho'. YUM

one messy attachment! si, have had the mole, and it is yummy. however this stuff to me....you know the rats with crack who won't stop til they die? i can survivve on a little nibble lunch a day, but i can and do eat this stuff 'til it's gone-no matter how much. alwaays want to explode after, but always have a big smile. love curry anyways, but the twist in this is astounding, palate-wise. there's a company that makes a easy-to-make premix - just add chicken and taters. cant-miss yumminess, though hard to find stateswise. couple places in the two chinatowns here carry it, and this is what it looks like

ha ha the rats, surely i could die of a food OD too, specially with curries... yeah! i mentioned Mole to you 'cause for the over 30 years i lived in Mexico the only curry i ever tasted there was Indian curry, but it is not that common either... a lot of people know just the dark deep red color of mexican mole, but just like with asian curries there is a HUGE variety of moles in Mexico, green mole, pipian (sort of an orangy mole), adobo, etc...

when i moved to US and started eating Thai food, indian food, and even Japanese curry i realized they were the same concept as moles!!! another similarity between asian and latin foods...
and well probably my favorite curry these days is actually Japanese curry (but again, i haven't tried this one..)

ay ay ay ay (painful screams) i have never tried Singapore curry... but hey with that link seƱor now i am going to have to!

and those pieces of bread you have there, yum!! they are for cleaning the plate of any curry residues left, huh?

oh i must give also our friend Perro some credit when it comes to prepare curries from scratch, he's really good at making indian Vindaloo and yellow vietnamese curry... just wish we could be eating your Singapore curry now instead of typing... hungry!!
