Sorry I'm so late (:

Well it is a very easy recipe ... you need:

Chicken broth, celery chopped in very small pieces (including leaves), hard boiled eggs, gouda cheese in small squares.

Lets see, the best of course is to make the broth with fresh chicken and any vegetables that you like. I usually add some peppermint to it when starts boiling, gives a subtle flavor that I really like :)

When you have it done, strain and add the chopped celery and the chopped egg. Let it boil for a very short time and serve.

I like to put the cheese at the bottom of the bowl so when you pour the soup it melts.

Tadaaaa :D ..very simple isn't it?? and veeery tasty I can assure you

...oohh by the way, the quantity of everything varies depending on how many will eat it :)

..but I would say for 2 persons: I liter of broth, 3 stalks of celery and 2 eggs. The cheese is up to you ;)

thank you Euz, sounds good, only I am not overly fond of celery :-) - pepperminst sounds like an interesting addition, like in avgolemono.

I guess you can do the same soup with other green vegetable... it will taste different... but yuummyy I'm sure :)

Yeap... you know, when I make Mole I put a little bit more peppermint on the broth and then when you eat the chicken with the sauce you enjoy it..and later don't regret it...hehehhehee :)
