Thanks Martina. It is a great vegetable. Only available in the spring for a few weeks, but it is sold frozen too. Just the very young tips are eaten, with the brown fuzzy stuff removed of course.

oh interesting vegetable! how do you cook it?

Martina, it's cooked in just enough water to almost cover, a bit of salt, boil for only a few minutes until fonds start to unwind. Drain. Handle delicately so fonds don't entirely unwind, they look better tightly closed. With butter and a dash of balsalmic vinegar.
