Shaved Brussels Sprouts Salad



Judging by the way my hair is doubling in size during my walk to work, I think it’s safe to say that summertime has officially *arrived.*

As we all know, the heat waves come along with site Agen Sbobet a three-month-long craving for refreshing food and drink. And since it’s (sadly) hard to subsist off a diet of popsicles and Shiner Ruby Red for an entire season, I decided to add some fresh vegetables into the mix.

This salad is super easy to make, and looks/ tastes much fancier than the sad, untouched vegetable platter that keeps haunting your backyard cookouts. So take it from me – put in the (very small amount of) extra effort for your next BBQ, and leave the raw broccoli in its grocery store home.

Ingredients
1 lb brussels sprouts, finely shredded or shaved
½ c dried cranberries, roughly chopped
½ c slivered almonds
¾ c shaved cheese (parmesan, pecorino, asiago, or a blend)
4 tbsp olive oil
6 tsp fresh lemon juice
2 tsp rice wine vinegar
1 tsp dijon mustard
¼ tsp finely grated lemon zest
½ tsp salt
¼ tsp pepper
Instructions
In a large bowl, combine first four ingredients.
In a small bowl, whisk together remaining ingredients.
Toss together to coat. Serve immediately.
