I'm sure most people could use "port" and "starboard" labels instead. ;)

but starboard is such a long word... there goes symmetry.

Funny. On stage usually "red" is reserved for "stage right", probably because of the same first letter. Stage-left is not nearly as consistent in coloring.

Does this vessel make wide left turns or something? ;-)

there's a little sterring wheel cropped at the bottom which weston said steers the ship, so i'd guess it is the helm.

It is the helm indeed. Weston said that the explicit labeling is a requirement.

because of the international nature of who might have to take control, say, in an emergency.

left and right are more recognizable internationally than port and starboard i guess.

Kind of surprising they went for red and green though... not so good for color blind people.
